PREPARATION

Inca Salad - In a bowl, mix vegetables, season with salt, add dressing, and serve cold or at room temperature.

Sweet Plantains - Preheat oven to 350°F. Bake plantains for 6 minutes. Transfer to a plate, drizzle with mojo, and top with cheese and cilantro. Enjoy hot.

Pollo Criollo - Preheat oven to 350°F. Bake chicken skewers and potatoes for 8 minutes. Plate with sauce at the bottom, potatoes and skewers on top. Garnish with greens. Enjoy hot.

Coconut Fried Rice - Transfer contents to a microwave safe container. Heat for 2-3 minutes or desired heat. Transfer to a plate. Enjoy while hot.

Mexican Chocolate Tres Leches - Transfer to plate, if desired, top with mascarpone cream and serve!

THAW
Thaw salad, rice and dessert in refrigerator to chill before preparation.

STORAGE
Store salad and fried rice in refrigerator for one or two days, and other items in freezer for a meal within a day or two.
Or, store all items in freezer for up to two weeks.
