Chef Rodolfo Cuadros’s Amaru in Chicago, IL is literally a love letter to Latin American culture.

As a little boy who grew up on a Columbian farm surrounded by Mom, grandma and aunts preparing traditional cuisines to a world travelling chef in London, Europe and Asia, Chef Cuadros carved his expertise in upscale Latin American fare, a huge contrast to the image of Latin American food being “big portions and a lot of fried stuff,”
